Cauliflower Fried “Rice”

Ok – if you are anything like me, you’ve been mildly (read: VERY) skeptical about the sudden influx of cauliflower recipes invading Pinterest and the general food blogosphere¬†lately. I’m not a huge cauliflower fan to begin with, and therefore couldn’t wrap my head around how it could be a passable sub for my favorite grains. CSA Post #1: Collard Green Veggie Wraps

So we took the plunge and bought a 1/2 share of produce for the summer at a family friend’s organic farm, and it’s been awesome so far. I love the variety (farmer Leo makes his own salad greens mix that is AMAZING), and I love that we get to try new things and experiment a bit in the kitchen. Mozza Pasta

This post highlights my husband’s favorite meal. When we first moved in together, I was attempting to channel Martha Stewart, trying out all these new recipes to help make our apartment a home. One night I had a rough day and wanted some comfort food, and decided to simply turn a caprese salad into a pasta dish. It is such an easy meal to throw together, and G absolutely loved it. He raved about it more than anything I had made to date, and promptly named it Mozza Pasta. And asked for it. A lot. What can I say? He likes the simple things in life. Continue reading
