Sun-Dried Tomato Pasta

Once upon a time, Stop and Shop ran a 4 week mega-sale on sun-dried tomatoes in olive oil. I’ve never seen anything like it since. Thankfully, I bought 20 jars of it during the sale, so there won’t be a shortage of this pasta in my home anytime soon.

It’s a tangy, summery sauce that just tastes so fresh. And with it being so easy to make, it’s a regular in our summer recipe rotation.

Sun-Dried Tomato Pasta

3/4 cup oil packed sun-dried tomatoes

1/4 cup fresh basil leaves, plus more for garnish

2 Tbsp Almonds (unsalted)

2 Tbsp fresh Parmesan cheese

1 Tbsp garlic

salt and pepper to taste

1/2 cup feta cheese

gluten-free pasta (I prefer corn/quinoa blends)

1. Cook pasta according to package directions

2. Add the first 6 ingredients into a food processor, pulse to combine.

3. Add 1/2 cup of the cooking water into the food processor, pulse to combine.

4. Place into serving dishes, sprinkle with feta cheese.


Enjoy with a nice glass of white wine!
